Antioxidant Potential In Petai Peel (Parkia Speciosa)

ABSTRAKÂ
Bagian kulit petai (Parkia speciosa) yang tidak dimanfaatkan biasanya dibuang sehingga menjadi limbah. Padahal limbah kulit petai (Parkia speciosa) ini diketahui memiliki kandungan antioksidan yang cukup tinggi. Tujuan dari kajian ini adalah menganalisis potensi kulit petai (Parkia speciosa)sebagai sumber antioksidan. Penelitian ini dilakukan dengan menggunakan metode studi literatur yang mengkaji mengenai senyawa bioaktif antioksidan yang terdapat pada limbah kulit petai (Parkia speciosa). Data yang digunakan dalam penelitian ini adalah data sekunder yang diperoleh dari publikasi ilmiah seperti jurnal, buku maupun media internet. Data yang diperoleh, kemudian dianalisis secara dengan cara memaparkan dan membandingkan hasil-hasil penelitian eksternal terkait pemanfaatan limbah kulit petai (Parkia speciosa) sebagai antioksidan. Hasil penelitian membuktikan bahwa bagian kulit petai (Parkia speciosa) diketahui memiliki manfaat sebagai antioksidan karena di dalam kulit petai (Parkia speciosa) mengandung senyawa fenol dan flavonoid. Kulit petai (Parkia speciosa) berpotensi sebagai senyawa antioksidan alami karena memiliki aktivitas antioksidan terhadap radikal bebas DPPH dan ABTS. Berdasarkan hasil kajian, dapat disimpulkan bahwa kulit petai (Parkia speciosa) memiliki potensi sebagai sumber antioksidan.
